Pineapple Shrimp Stir-Fry

Paleo Pineapple Stir Fry | I get so much inspiration from Instagram. I’ve posted about Instagram fun before, but this time something caught my eye that I had to recreate:

Pineapple may be my favorite fruit, and who doesn’t like shrimp? Sold. I don’t properly know what’s in the original (is that rice?) but in my version I made the base with one of the vegetables I’m having a moment with–cauliflower!–and added quick cooking shrimp and the fruit of the pineapple I served it in. Crazy delicious, simple, and with a presentation that has a bit of tropical wow factor. So perfect for summer!

Pineapple Shrimp Stir-Fry

Serving your stir-fry in a pineapple makes for a festive presentation to dress up a dish that is far easier to make than it looks.

Serves: 4
  • 1 pineapple
  • 1 lb shrimp
  • 1 tbsp coconut oil
  • 1 cauliflower
  • 1 onion
  • ½ tsp salt
  • ½ tsp pepper
  • Scallions
  • Black sesame seeds
  1. Heat the coconut oil over medium heat in a large skillet.
  2. Thinly slice the onion and finely chop the cauliflower. Sauté the vegetables in the coconut oil until very soft.
  3. Add the shrimp, salt and pepper, and cook (stirring occasionally) until shrimp is cooked through, approximately five minutes.
  4. Slice the pineapple lengthwise, cut out and discard the woody core.
  5. Hollow out both side of the pineapple, add the fruit to the skillet. Toss with the shrimp and vegetables until warm and the juice has cooked off.
  6. Mound into the halves of the pineapple, top with chopped scallions and black sesame seeds. Serve warm.
